Each region of Karabakh has its own specialties. Delicious dishes of Shusha cuisine, which is an integral part of Karabakh cuisine, are available. Shusha cuisine stands out for its richness and uniqueness. Ingredients:
3 lamb legs
1 large quince
12 pieces of albukhara
20 pieces of baked chestnuts
1 cup of cooked peas
1 large and 1 small onion
butter
a pinch of saffron
pomegranate juice
salt to taste
Method of preparation:
Place the lamb legs in a pot and fill with water to cover them. Add salt and small onions to the pot and cook. Take the cooked meat out of the water and drain the water. Melt the butter in a pan or fry the onions cut into half rings in the melted butter and lightly sprinkle with salt. Pour the strained broth into the pot and place the meat on it. Then add chopped quince slices, cooked peas, cooked chestnuts, albukhara, roasted onions and saffron. Put the pot on a low heat with the lid closed and cook until the quince is cooked. Put the cooked food on a plate, sprinkle it with pomegranate seeds and pour pomegranate juice over it.
